Start by deciding where the headset should rest when it is not on your head. A hook or the side of the desk keeps the cable from collecting under a chair wheel.
Give the cable one route
Run the cable along the back edge of the desk, leaving one relaxed loop near the controller or keyboard. Use soft ties rather than tight knots so the cable can still move.
Keep controls within reach
Place the inline volume control where you can find it without looking. If the control disappears behind the desk, you will end up reaching for system menus during the match.
Leave room to move
Sit down and turn your chair before you finalize the route. The right setup has enough slack for normal movement and no slack dangling near wheels.
